     Since January 1997 Judy Hogan been providing bread and poetry in exchange for a contribution to her life as a working poet.  Now she is selling eggs from her White Plymouth Rock chickens. Suggested donations for eggs and bread are below.  Orders must be received in advance, and all donations received at the time of delivery unless other arrangements are made. 

            The hens began laying in early September.  In the beginning they are small, pullet eggs; later they will be larger.  The flock receives no hormones, eats a grain, fresh greens, and insect diet.  The brown eggs have a deep yellow yolk, a firm white, and are fresh each week.  Eggs are now recommended for health.  They give good benefits to heart and eyes.

            Judy's basic bread dough, a soy-rye combination, which makes a complete protein, i.e., as

good as meat, she developed as a high protein survival bread.  The rolls and pizza dough are from the same recipe.  The oat bran bread she developed in response to a friend's need to eat at least ½ cup of oat bran (helpful in reducing cholesterol) every day.  This bread is heavy, but it is high protein, too, and low in empty calories.  Olive oil is also recommended for cholesterol problems.  The cinnamon bread and rolls are made with brown sugar, cinnamon, walnuts, and a small amount of butter.  The pizza dough is half a loaf of bread dough, frozen before its last rise.  It's easy to thaw it, roll it out, and put it onto a greased baking pan, spread with Pizza Quick or other sauce, favorite toppings, and mozzarella cheese, and bake at 400 or 425.  It makes one large pizza.

     All bread products are made with purified water and organic flours purchased directly from Lindley Mills in Saxapahaw.  Each regular loaf contains 2/3 cup whole rye, 1/3 cup soy, 1/3 cup of oat bran, about 1-2/3 cups unbleached bread flour, 1 T. Black strap molasses, 1 T. Corn oil, ½ T. Yeast, and 10 oz. Water, 1 T. Salt.  The oat bran loaf contains 1 cup of oat bran, 1/3 cup soy, 1/3 cup rye, 1 T. Olive oil, 2 t. Salt, 8 oz. Water, 1 T molasses, 2 t. Yeast, and 1-1/3 cups unbleached bread flour.
